Wine Pairing: We'd recommend a Sterling Vineyards Reserve Chardonnay to pair with this dish. This delicious Chardonnay is creamy and buttery with slight overtones of oak and vanilla.
Ingredients:
1 pound boneless chicken thighs
salt and pepper
2 tablespoons virgin olive oil
1 yellow onion,diced
4 garlic cloves, diced
1 tablespoon dried oregano
1 tablespoon ground cumin
1/2 teaspoon anise seed
1/2 teaspoon dried red pepper flakes
3 15 ounce cans cannellini beans
1 cup chicken broth
1 7 ounce can diced green chilis
1/2 cup whipping cream
1/4 cup dry white wine
shaved parmesan cheese
chopped cilantro
Instructions:
1. Rinse chicken pieces and remove skin. Chop into 1 inch size pieces. Sprinkle with salt and pepper.
2. In a large pan....Saute onion olive oil along with the oregano, cumin, anise seed,and red pepper flakes until slightly softened.
3. Add chicken to the pan and saute for another 5-10 minutes.
4. Drain the juice from the cannellini beans. Save 1/2 cup of the liquid from the beans. Add this liquid, beans, chicken broth, green chilis, and whipping cream to the pan. Simmer for 15 minutes on low heat.
5. If desired, top with shaved parmesan and chopped cilantro.
