Fabulous Lamb Stew Recipe



Give this fabulous lamb stew recipe a try. You won't be sorry. This is a great meal for a cool winter evening. Serve with your favorite Pinot Noir for a gourmet treat. A hearty, flavorful dish!

Wine Pairing:A Pinot Noir would enhance the flavors of this lamb stew. Consider the wonderful D'Argenzio 2004 Pinot Noir Thorn Ridge Ranch. Lush wine with rich fruit flavors and hints of cloves and tobacco. Earthy and delicious to drink. Wines are grown in Sonoma's Russian River Valley in a sandy loam soil and climate that produces a Pinot Noir with intense fruit flavors.









Ingredients for lamb stew:

4 lamb shanks
2 tablespoons oil
1/4 teaspoon pepper
1 large onion, chopped
3 garlic cloves, minced
16 ounces whole canned tomatoes
1/2 cup beef broth
1/2 cup dry red wine
2 teaspoons dried rosemary
2 carrots, cut into strips
2 stalks of celery, sliced
1/2 cup rice, uncooked
4 teaspoons lemon juice
3/4 teaspoon salt
2 tablespoons Italian parsley, chopped

Instructions for lamb stew:
1. Saute onion and garlic in oil for 5 minutes in a large pot.
2. Add lamb shanks to pan and brown.
3. Add the liquid from the canned tomatoes, broth, wine and rosemary to pan. Cover and simmer 90 minutes.
4. Remove shanks and cut meat from bones into small pieces. Skim fat from surface.
5. Add vegetables and rice. Simmer, uncovered for 20 minutes or until vegetables are tender.
6. Add lamb, tomatoes, lemon juice, and salt; heat through. Garnish with parsley.
