Chicken Parmesan

This hearty dish is a personal favorite and requested often when our grown children come visiting.









Wine Pairing: Pinot Grigio would be an excellent dry white wine to pair with this dish. Use the same wine as you prepare the meal. Consider the Estate Grown Pinot Grigio from Avio Vineyards in Amador County. This Tuscan style wine has flavors of crisp green apples with a slightly sweet finish. It's a lovely wine. If you can't find Avio's Pinot, Chateau Ste. Michelle makes a nice Pinot Gris that should be easy to find. Both would be excellent paired with this Italian dish.


Ingredients for this recipe:
4 skinless, boneless, cut into strips
3eggs, beaten
1/2 - 3/4 cup freshly ground Parmesan cheese
salt
freshly ground black pepper
1/2 cup dry white wine
4 tablespoons margarine
3 cloves garlic, minced
1/2 t. dried basil
10 oz. sliced mushrooms

Instructions for this recipe:
1. After rinsing and drying the chicken, season chicken with salt and pepper to taste. Spread Parmesan cheese onto a plate. Dip chicken in eggs, then coat with Parmesan cheese.
2.Melt margarine over medium high heat. Cook chicken until brown.
3. Reduce heat and add wine, garlic, mushrooms, basil, and oregano. Cover and simmer over low heat for 20 minutes.
4. Serve with pasta or rice. Enjoy!
